Raffles Maldives Meradhoo is looking Enthusiastic and Engaged, Talented and Experienced professionals to join their team for the following vacant positions:

RESTAURANT CHEF -NIKKEI CUISINE

EXPERIENCE AND SKILLS:

  • Previous experience in Fine Dining or luxury hotel/resort.
  • Strong leadership, ability to train and motivate team.
  • Operations experience would be plus.
  • Nikkei Cuisine experience is a must and international cuisine is a plus.
  • Working knowledge of HACCP.
  • Computer knowledge, word, excel,Recipe software knowledge.
  • Detail oriented/task motivated.
  • English language is a must.
  • Ability to work in a remote location or island life.

ROLE & RESPONSIBILITY:

  • Reports to Executive Chef, directly responsible for our over water restaurant, functions including food purchasing, preparation, direct guest interactions, training and maintenance of quality standards;sanitation and cleanliness.
  • Training of employees in methods of cooking, preparation, plate presentation, portion and cost control and sanitation and cleanliness.
  • Ensure that all food and products are consistently prepared and served according to the restaurant’s recipes, portioning, cooking and serving standards.
  • Good communication with Food and Beverage Manager, kitchen personnel and guests.

DIRECTOR OF ENGINEERING

EXPERIENCE AND SKILLS:

  • Bachelor’s degree in mechanical engineering, industrial engineering, building management, or in other relates fields.
  • Previous experience luxury hotel/resort.
  • Excellent leadership skills.
  • Critical thinking.
  • Excellent organizational skills.
  • Ability to work in a remote location or island life.
  • English language is a must.
  • Hands on person.
  • Excellent communication skills.

ROLE & RESPONSIBILITY:

  • A Director of Engineering plans and directs all aspect of engineering activities and projects with in the property.
  • Ensure that all Engineering projects, initiative, and processes are in conformity with organization’s established policies and objectives.
  • Utilizes best practice engineering methods to provide expert technical guidance for engineering initiatives.
  • Incorporate all functions related to safety testing, repair, and maintenance of all equipment.
  • This role also involve providing training and technical leadership to appropriate personnel.
  • The work description entails examining technology, resources at hand, and market demands.

RESERVATIONS And SALES AGENTS

EXPERIENCE AND SKILLS:

  • Previous experience in a similar function from a luxury island resort.
  • Ability to work in a remote location or island life.
  • Excellent telephone presentation, sales skills and ability to up sell is a plus.
  • Experience in Opera, PMS or other Reservation software.
  • Strong communications skills.
  • Multilingual advantageous.
  • Detail oriented/task motivated.

RESPONSIBILITY:

  • Maximize ales and profits.
  • To provide a point of contract for all Revenue associated processes and queries.
  • Prepare, update and file all correspondence.
  • Communicate to related departments on a daily basis in regarding to V.I.P’s Arrivals.
  • Maintain departmental brand standards.
  • Ensure all telephone calls are handled politely and efficiently.
  • Handle all reservations through different channels.
  • Arrange domestic flight.
